  3. Lightly season shrimp with salt. Dip the shrimp in flour. Shake off excess. Coat with egg. Coat with coconut crumb mixture.
  4. Lay shrimp on sheet. Spray shrimp with cooking spray. Bake for 10 mins. Turn shrimp an bake for 7 mins.
  5. Combine apricot preserves, rice vinegar and red pepper for sauce
